A.K.A. “The Peach Thing”
Kind of like a cobbler but requires almost no baking skills. I cannot overstate how scrumptious this is.
1/2 cup rolled oats
1/2 cup brown sugar
1/4 cup flour
1/2 tsp. cinnamon (optional)
1 stick unsalted butter, sliced
7 medium (organic) peaches, peeled

In a bowl combine oats, brown sugar, flour, and cinnamon. Add butter and mix (you can use your hands) until it’s crumbly. If you’re having trouble peeling the peaches, blanch (i.e. boil) them in a large pot of water for a minute or two, cool, and then they should be super easy to peel. Slice the peaches and put into a (slightly greased with butter) baking dish. Sprinkle oat mixture on top and bake at 350 degrees for about 40 minutes. Serve with fresh cream or ice cream.
I have been meaning to comment on this recipe for a month now…. sorry it has taken me so long! I made this peach crisp for a family dinner in September. I was looking for a recipe that used Colorado Peaches (they were so seriously yummy this year!). My Aunt and Uncle were in from out-of-town and my Aunt is about the best cook I know. I get a bit intimidated cooking for her. Anyway, this was delicious and my Aunt raved about it and wants the recipe. I think the key is that it does not use much sugar at all. Just a 1/2 cup of brown. Normally when I make crisps, I feel like I am coating the fruit in sugar before putting the topping on. Not to mention the sugar in the topping. In this case, the peaches were able to speak for themselves! Great recipe – thanks!
